This just in: Henry Adaniya of the late Trio has resurfaced on Oahu with a hot dog shop serving--get this--foie gras hot dogs! Well, I never. 

Hank's Haute Dogs will serve classic Chicago dogs, polishes, a local Portuguese sausage (available with kimchi), brats, something called a "no dog" (with avocado, tomato, onion, cucumber, Chinese parsley, chipotle mayo, cheddar), and, according to this interview, a series of custom dogs featuring "lobster, rabbit, boar, buffalo, venison . . . " In the aforementioned piece Adaniya says his inspiration was the hot dog stand his parents ran on a Hawaiian beach before he was born. 

Of course the real question is why Doug Sohn's business model hasn't been kyped in every city on the planet by now.

I worked with Henry for a couple of years at Trio after the opening. Nice guy-but a bullshitter, not many skills behind the suit. He coasted on other people's talents. Not at all surprised he's ripping on Doug's and not acknowledging it-
After I was injured in a workplace accident at Trio, Henry actually had the gall to sanctimonously tell me he'd NEVER take workmen's comp money if he was an employee injured on the job.
Turned out Trio had the lightest workman's comp policy possible when they opened.
My elbow is permanently disabled as a result of the accident(which was due to the chef's negligence.)
I sued for workmen's comp- it took a few years but it was a PLEASURE to collect from them, especially since when I came back from a serious operation after the initial injury, the restaurant had just gotten its first four star review from the Tribune.
There was a staff meeting that Saturday to congratulate the staff- and then announce that my job classification was having a pay cut by 25%.
I was in a lawyer's office the following Monday.
