Reports of the closing of John Bubala's excellent Baccala were premature, but the chef confirms that the restaurant will in fact shut its doors this Saturday, September 1. "It seemed like the majority of the customers were really looking for meatballs and red sauce, eggplant parmesan, and fried calamari," he writes.

Wicker Park, what's wrong with you?!?

On the brighter side, Bubala says Timo is doing swell and he's currently serving a tasting of four prosciuttos: Parma, Serrano, La Quercia, and Ossabaw.

Ossabaw!

I know, I know, it's nit-picking but it probably should read 'a tasting of four cured pork products' or something like that since Spaniards probably woudn't like their beloved 'jamon' being referred to as 'prosciutto.' Or, at least I think so...

You're probably right. But that's what Bubala is calling it. It's a little like Mario Batali selling lardo as "prosciutto blanco." Makes it easier on some folks.

Never fails. Every time we get some amazing Italian food in this town it ends up closing. I'm from Italian American heritage and I love Tufano's Vernon Park Tap as much as every other paesan but come on. Chicago should rival New York and San Francisco for its great Italian food and instead we get another dollup of corporate Gino's East glue or endless breadsticks and 'alfredo' anything from the Olive Garden. Has anybody ever heard of grilled vegetables or maybe some fish. Damn people. But I digress...

Maybe if Baccala wasn't in Wicker Park it would have survived. In addition to the impossibility of parking near the restaurant, WP locals are not the adventurous folks their wacky outfits would lead you to believe. Give them another miniburger and they'll be happy, but unfamiliar cuts of meat? Forget it.
