Here's the story, the video, the slide show, the recipes--much of this week's issue is given over to the Whole Hog Project, our 18-month farm-to-table odyssey with a herd of American mulefoot pigs. And it doesn't stop there--next week part 2 of Mike Gebert's Sky Full of Bacon documentary will drop right here on the Food Chain. But that isn't all . . . Martha Bayne asked a bunch of chefs where they'd eat of they had time, Sam Feldman lists CSAs that operate over the winter, and in listings we ran nine of 2008's best restaurants (so far and according to me, anyway). June 25th - 3:59 p.m.
We wondered what happened last night at Graham Elliot when someone proverbially scratched the needle on the chef's iPod during the intro to "Welcome to the Jungle" and restarted (ick) Pearl Jam's "Even Flow," as if to say "Easy, people. You're not in the jungle. And we're not in the weeds. Your honey-lavender chicken and spice krispie treats will arrive like butterflies." My review will arrive soon (along with L20), but for now let me say GE was behaving like a week-old restaurant rather than one approaching the month mark. In the meantime, I'd like you to kneel before the best thing we ate: Maybe it isn't fair to post a picture of leftovers, but this Hummer of a double-cut Berkshire pork chop was really good, with juicy, rosy flesh layered in a succulent blanket of fat. It sat atop some grits and collard greens, topped with a bit of barbecue sauce and a crunchy watermelon chutney. It's really a stupidly excessive portion, but in spite of myself, I'll enjoy eating it over the next three weeks. October 10th - 11:30 a.m.
The windows are papered and the tiny space is empty but Xeroxed fliers taped to the glass indicate Leyla's Turkish Restaurant and Bakery will be opening at 3213 W. Irving Park, a tiny storefront once occupied by Latin Restaurant and Catering.
